If you are having a theme party, your party games should be related to the theme throughout the evening. For example, for a pirate party, you might have a treasure hunt that lasts for the whole evening. On the other hand, if you are having a casino party, you'll have lots of games going on! Generally speaking, depending on the party, here are some game ideas:

Board games. You can create teams to play against each other. Scrabble, Trivial Pursuit (any of its many variations!), Scattergories, Taboo, Pictionery, Clue, etc. Check out AreYouGame.com for some great games.
Physical games like Twister (this is especially fun at a nostalgia party), Charades, and others.
If appropriate, adult games could include drinking games.
If you have the equipment, games like pool and ping-pong
If it's an athletic themed party, or you have an athletic crowd, you could play a sport - football, soccer, baseball, volleyball, etc.
And even if it's not a casino night party, you can play cards. There are so many fun card games: Poker, Canasta, Euchre, Pinocle, Bridge, and don't forget dice games like Bunco, and other games like Dominoes.
